Homemade cookies never tasted so good

Nothing tastes better than something made from scratch. What about freshly baked, home made chocolate chip cookies? Yea they just satisfy any sweet tooth craving (and I know because when their is plate of them in my kitchen, they are typically gone within a couple days). Now what I am about to share with you is not your typical chocolate chip cookie recipe. One secret ingredient I add takes these cookies from ordinary to extraordinary. Any guess as to what it might be? Well keep reading and I'll tell you. 


Pictured left is a plate of these delicious, soft baked chocolate chip cookies. The one thing I love about these cookies is that they baked in 10 minutes and they stay soft for days (which is hard to master). Now typically this recipe makes 14 medium/ large cookies, but I use an ice cream scoop and or melon baller to make sure each cookie is the same size and I make about 3 dozen cookies. Now whose ready to know my secret ingredient? Well keep reading to find out.

Ingredients:
3/4 cups of unsalted butter, softened (1 1/2 sticks)
3/4 of dark brown sugar (i like the taste better, but if you prefer light brown sugar then go for it!)
1/4 cup of granulated sugar
1 large egg
1 teaspoon of Vanilla Extract 
2 cups of All Purpose Flour
                                                     one 3.5 oz package of Vanilla Pudding mix (do not buy                                                      the cook and serve!!!)
                                                     1 teaspoon of baking powder
                                                     one 12oz bag of chocolate chips (about 2 cups)
Alright, now that we have our ingredients laid out, lets get to baking shall we!

Steps:
1.Add the paddle attachment to your mixer and combine the egg, butter, sugars and vanilla and mix on medium-high speed until well combined.
2. Once combined, scrape down the sides of the bowl. Then add flour, pudding mix, and baking soda and beat on low until all of the ingredients are combine.
3. Scrape down the side of the bowl. Then add in chocolate chips. Beat for about 30 seconds to a minute.
4.Using ice cream scoop or melon baller, scoop out dough and roll and then place on a plate or platter. 
5. Once all done, cover in plastic wrap and place in the refrigerator for at least 2 hours.
6. Once 2 hours have gone by, pre-heat oven to 350.
7. Line baking sheet with silicon mats or parchment paper
8. Place cookie dough balls on cookie sheet and flatten slightly with the palm of your hand.
9. Bake for 10-11 minutes
10. Let sit for a couple of minutes and then transfer to cooling rack or plate.

Now tell me.. how easy was that?! Did you figure out what the secret ingredient was? Quick, go read the ingredient list again. See anything that stuck out to you? If not I'll tell you... it is the Vanilla Pudding Mix. Seems odd to be adding that to a cookie dough batter, but that is what gives the cookies its flavor and what I personally think keeps the cookies soft for so long.
