Potato and Ham soup take over the Palmetto State and my kitchen!

So this post is one that I have been waiting to share with you for a while because I have been trying to make it my own and make sure I share this with you not only so you can enjoy it but so you can understand just how great this recipe is. 

Now this is a recipe that was shared with me by someone who has learned that I love food and I am forever grateful because after having this for the first time in her kitchen, I have wanted it everyday since and it tends to not last an hour in my kitchen! So ya dying to know what it is? Well keep reading and I'll tell ya!

the soup is.... Potato, Cheese and Ham Soup

Yes something so simple but it is oh so good and perfect for any soup lover and for someone who literally only has 30 minutes to make a meal! So keep reading y'all and i'll share photos and of course the recipe. 



Before we dive in here, just take a look at that picture. Doesn't it look just like heaven in a bowl? Its creamy and cheesy and has chunks of potatoes and ham and is just delicious! Yum. 

Anyway, let's not get carried away and i'll share the recipe.

Ingredients:

3-4 medium red potatoes, peeled and cubed
2 cups of water
1/4 teaspoon of salt
1/4 cup of diced onion
3 tablespoons of butter
3 tablespoons of All purpose flour
                           Ground black pepper
                                                   3 cups of milk
                                                   2-3 cups of shredded cheddar cheese
                                                   1- 1 1/2 cups of cubed cooked ham
                                                   Sprinkle of Italian Seasoning
                                      Dash of red pepper flakes (for a little heat) OPTIONAL

Alright, so now that you have gathered up your ingredients, IT'S TIME TO COOK!

First bring the water and 1/4 teaspoon of salt to a boil; add potatoes and cook until tender. Reserve 1 cup of the cooking liquid (take a measuring cup and spoon it out till you have correct amount) and then drain potatoes. In the same pot, melt the butter over medium heat. Sautee chopped onions in the butter until tender. Then add flour to onion and butter mixture and mix till smooth (if it's not entirely smooth, don't worry, your milk and water will help!). Next gradually add black pepper, potatoes, reserved cup of cooking liquid, and milk to the pot. Stir well and then add your cheese and ham (Now for the cheese and ham, the amounts vary depending on if you really want to taste the cheese and if you want a lot of ham in it. That choice is up to you, but these are my measurements and what I like, so you make the call for yourself!). Finally turn the soup on low, stirring occasionally and let simmer for about 20 minutes. 

When it is all complete you will have something that looks just like this...


Come on, now aren't you craving a bowl of this soup now? Cause I know I am. It is so simple to make and it stores really well in the fridge! Normally in my kitchen we don't have excess soup, but in the off chance that we do, I love heating it up the next day for lunch! 

Another tip for this recipe is that sometimes I substitute the cooked ham for bacon. If you do this I recommend you purchase thick cut bacon just so it does not get lost in the soup or cook faster than the rest of the soup. Also for the cooked ham I purchase Dietz and Watson's ham steaks. They are perfect, and are always on sale, so I stock up and always have them in my fridge to use in this soup or to make omelets, use in salads, etc!
