Italian Eats from an Italian Kitchen: Homemade Pasta
As of now, y'all have probably thought I'm just a southern girl just sharing with you my southern roots; well there is another side of my food loving self that you may not know... i'm part Italian. This probably explains my love of pasta and cheese (which for any Italian is an amazing combination)! Anyway my post today talks about the one staple that can be found in any true Italian kitchen... any ideas as to what that is? Anyone? Ohh come on you know! Give up? Alright well the answer is pasta, but not just any old pasta, but homemade pasta. Nothing tastes better! (That picture is worth a thousand bites)
Literally, boxed pasta doesn't even come close in taste to when you prepare and eat fresh pasta. Now I know what some of you are thinking, making fresh pasta is difficult and takes so much time. Well what if I told you that you were wrong. What if I told you, you only needed 2 1/4 Cups of All Purposed Flour and 3 Eggs (beaten)? Ahh now your having second thoughts cause you now realize it's easier than you thought. Well everyone, yes it is that easy. So keep reading and ill give you the basic steps on making your own pasta!
On a clean, flat surface pile the 2 1/4 cups of AP Flour. Next make a well in the pile of flour. Next beat the eggs and pour into the well. With a fork, fold in the flour into the eggs. Make sure that the eggs don't run from the center (if it happens a little bit don't worry)! Once a dough is starting to form, you can use your hands to knead the dough and form it in a ball. Next wrap the dough in plastic wrap and let sit in the fridge for 20 minutes.
Now comes the fun part, the rolling and pasta forming! So set out your dough on the counter and let it come to room temperature. When your dough is set, sprinkle flour on a clean, flat surface. Next flour your rolling pin (trust me, it helps the dough not stick). Next lay the dough out onto the floured surface. Roll your dough out until it is thin enough to go through your pasta roller. Now this step is different depending on the type of pasta you want to make (we chose fettuccine and thin spaghetti).
After you roll your pasta out, lay it out to dry. We had a pasta rack to hang our pasta on so we put cloths down and put the rack on top in case flour fell. After we hung our pasta up to dry we sprinkled a little flour over it. Let it sit for an hour or until you are ready to use it.
When ready to cook, boil a pot of salted water and toss in. Fresh pasta takes less time than boxed pasta so it will be done in only a few moments. Add your favorite sauce and top off with some cheese and you are ready to enjoy a fresh, homemade bowl of pasta.
