Mexican flare comes to the Palmetto State and to my kitchen Fajita style
Alright y'all, this post is going to have a little mexican flare to it. I'm not sticking to my southern roots and making a classic southern dish, but this is one dish that I deem worthy of staying in my southern kitchen. How do chicken fajitas sound? Add some seasoning, onions and peppers and you have yourself one perfect dish and one kitchen that smells amazing. Keep reading and i'll share with you this amazing recipe.
Oh the joys of using the crock pot; I find this one kitchen appliance that is not utilized enough, but definitely one I will start turning to more and more.
Now the dish that I have created here took only four hours in the crock pot and one that you can put on in the morning and leave to cook all day. Keep reading y'all.. the recipe is coming up next!
As y'all know, I like helping you gather your ingredients and then getting you on your way towards a great recipe.. so why change that now.. lets go gather our ingredients.
Ingredients
3-4 boneless, skinless chicken breasts
1 green pepper
1 red pepper
1 yellow pepper
1 yellow onion
1 package of Taco seasoning or Fajita Seasoning
Now that you have gathered your ingredients, let's get to cooking!
Steps
1. Slice up the peppers and onion and place in the crock pot.
2. Sprinkle some taco seasoning over the peppers and onions and mix until coated.
3. Take Chicken and coat with the rest of the taco and/or fajita seasoning.
4. Place chicken on top of peppers and onion
5. Turn on crock pot and let cook on low for four hours
Easy enough right?! I mean I thought so... so simple in fact that I can't wait to make this again. Now you can't just have the fajitas and no side dish, so ill share with you the most perfect side dish.
I like to pair this dish with a side of Rice-a-roni mexican style rice. Instructions are easy and can be followed right on the box. I personally had the rice on the side, but it tastes just as good in the fajita.
