Winner Winner Chicken Orzo Dinner: Hello Fresh delivered Straight to my door

The name caught your attention didn't it? Well when you are done with this meal you will feel like a winner winner! I am back with another HelloFresh meal, and like always I have made my changes and can't wait to share them with you! So whose ready to get cookin? Well you know how it goes, you have to keep reading to see how it turns out!

Our ingredients include:

  • Italian seasoning
  • Orzo pasta
  • Chicken Breast
  • Lemon
  • Parsley
  • Parmesan Cheese

Alright lets get cookin!

  1. Bring a large pot of salted water to a boil. Once water is boiling, add the orzo and cook, stirring occasionally, until cooked to your desire. Standard cooking time is 9-11 minutes for an al dente finish.  Drain and then return to pot
  2. Time to butterfly your chicken (unfortunately our chicken breasts were so thin that this step was impossible to complete, so we had to take a different approach to cutting our chicken). With your hand on top of the chicken breast, cut 3/4 of the way, parallel to the cutting board, stopping before you slice through completely! Open it up and season with salt and pepper and italian seasoning. Repeat with other chicken breast. 
  3. Heat a drizzle of olive oil in a large pan over medium- high heat. Add chicken to pan and cook until no longer pink in the center. Depending on how think your chicken breasts are, the time will vary. Once cooked, remove from pan and set aside on plate. 
  4. Cut lemon in half and squeeze lemon juice over the pasta. Also top with a little parsley. 
    1. My tweak to this step was to take a bowel and add the lemon juice, a little bit of honey, salt, pepper and parsley and stir until combine. Then I drizzled that over the pasta. If that does not sound good to you, i just added parmesan and butter to the orzo (which is what i did).


Now this recipe should have had another side, but unfortunately due to the condition of the veggies in the box, they were not edible to eat. The recipe they had for their roasted vegetables sounded amazing and i will share it with you here. Let me know if you try this! 

Ingredients include: Zucchini, tomatoes, panko breadcrumbs, parmesean cheese, mozzarella and italian seasoning

  1. Slice zucchini into 1/4 inch thick rounds. Cut the tomatoes into wedges
  2. Preheat oven to 425.
  3. Toss the veggies with the olive oil and a little italian seasoning.
  4. Once heated roast veggies until shy of tender (about 10 minutes)
  5. Once the veggies have roasted 10 minutes, remove baking sheet from oven. 
  6. Heat broiler to high or increase oven temperature to 500 degrees. Sprinkle veggies with panko, mozzarella and parmesan. Broil until panko is golden brown, cheese is melted and veggies are tender, about 3-5 minutes.
