Crusted Dijon Cod: our last HelloFresh meal

Okay, so we have reached the end of our HelloFresh box. Definitely been an interesting test on meal delivery service (but unfortunately one my boyfriend and I won't be continuing). So our third meal in this box was a Crusted Dijon Cod with Dilled Fingerling Potatoes and Roasted Broccoli (which unfortunately we could not eat the broccoli due to it being already spoiled). I definitely have to say that this recipe is one that we can't wait to make again for ourselves and I'm glad I get to share this with you.

Alright, so y'all ready to get cookin? Well you know we have to gather our ingredients first!

We will need:

  • Fingerling potatoes (12 oz)
  • Dill (1/4 oz)
  • Parsley (1/4 oz)
  • Garlic (2 cloves)
  • Lemon (1)
  • Panko Breadcrumbs (1/4 cup)
  • Cod (12 oz)
  • Dijon Mustard (2 tsp)
Alright, whose ready to start cooking?!
  1. Wash and dry the potatoes. Preheat the oven to 450 degrees. Cut the potatoes into 1-inch pieces. Pick fronds of dill and discard stems. Finely chop fronds until you have 1 TBSP. Finely chop parsley. Mince or grate garlic (i recommend grate). Zest lemon until you have 1/2 tsp. 
  2. Place potatoes into a medium pot with a pinch of salt and enough water to cover the potatoes by 2 inches. Bring to a boil and cook until potatoes are easily pierced with a fork, about 15 minutes. Drain and then return to pot.
  3. In a small bowl, combine parsley, lemon zest, panko, half the garlic, a pinch of salt and pepper, and a drizzle of olive oil.
  4. Pat cod dry with a paper towel, then brush fillets with a drizzle of olive oil. Season all over with salt and pepper.
  5. Place cod on baking sheet or baking dish. brush with a thin layer of mustard onto tops of fillets, then press crust mixture into mustard. Return sheet to oven and cook for about 8-10 minutes or until the cod flakes easily. 
  6. Add 1 TBSP of butter with remaining garlic, and add dill to pot with potatoes. Heat over medium heat and toss until butter is melted and garlic is fragrant, about 1-2 minutes. 


And there you have it! I am a big fish person, so seeing how easily this dish was made me excited to try it again. My favorite part of the whole meal I have to say was the fingerling potatoes.
