"Hello Fresh" food: Turkey Enchiladas

Hello y'all, so I know y'all have been waiting for my other two recipes from my previous Hello Fresh box, but with many issues, the other two meals could not be made. Hesitant to try another box of Hello Fresh, my boyfriend and I decided "Okay just this once and then if there are still problems, no more."

So new box, new week, and so far it has been good. Last night my boyfriend and I made Turkey Enchiladas. This is something I have always wanted to try and make, but never knew what ingredients i needed or even where to start. So thank you Hello Fresh for this first step in the right direction. Now my perception of making this dish was that it was going to be complicated and take long to make... well can I just say that I was completely wrong. I never knew something I loved so much could be so easy. My boyfriend and I decided that the next time we are going to use chicken instead of turkey! (So yes, there will be a next time for Enchiladas)! So whose ready for the recipe? And now, keep in mind I have added my own adjustments to this recipe.


Let's gather our ingredients shall we:

  • Olive Oil
  • Sugar
  • 1 Yellow Onion 
  • 1 Poblano pepper
  • 1/4 oz Cilantro
  • 2 Garlic Cloves
  • 1 oz Cream Cheese
  • 4 Flour tortillas
  • 10 oz Ground Turkey
  • 1 tsp Chipotle Power 
  • 1 TBSP Mexican Spice Blend
  • 1 box Crushed Tomatoes
  • 1/2 cup Mozzarella Cheese

Alright, let's get cooking!!

  1. Preheat broiler to high or oven to 500 degrees. Halve, peel and thinly slice onion. Core and seed poblano pepper, then thinly slice. Rough chop the cilantro and finally mince or grate garlic (i personally grate the garlic).
  2. Heat oil in a pan over medium high heat. Add onion and poblano pepper to the pan (i personally did not add the pepper due to a food allergy). Cook, tossing until charred in spots, about 7-8 minutes. Meanwhile, spread a thin layer of cream cheese on one side of each tortilla.
  3. Add turkey to the pan, breaking up the pieces. Cook until you don't see any pink, about 4-5 minutes. Season with salt, pepper and chipotle powder (be very careful with this spice- a little goes a long way). After combining spices, remove from heat.
  4. Heat a drizzle of oil in a small pan over medium heat. Add garlic and cook, tossing until fragrant, about 30 seconds. Add Mexican spice blend and cook, tossing until you can really smell the spices, about 30 seconds. stir in crushed tomatoes, sugar, and cilantro (i recommend using less than the recommended amount, cilantro can be over powering). Season with salt and pepper and remove from heat.
  5. Divide turkey mixture between the tortillas, placing on sides spread with cream cheese. Roll up the tortillas and place seam side down in a baking dish. Top with sauce and sprinkle with mozzarella. ** For this step, i recommend adding a little sauce into each tortilla. I found them to be a little dry without a sauce inside**
  6. Broil or bake enchiladas until sauce is bubbly and cheese melts, about 3-4 minutes.


And BAM! There you have turkey enchiladas. This HelloFresh recipe was great, but i definitely made some tweaks along the way and mentioned what i would have done differently. Now you are probably wondering what kind of side to have with this (due to the contents of the side that came in the box, and their condition I could not eat it). Here are a couple of my suggestions:
  1. Spanish Style Rice: I personally like the Rice-a-roni brand
  2. Salad: I recommend having a light vinaigrette on the salad due to the heavy sauce on the enchiladas. 
  3. Corn and bean cold salad: I'll share my recipe for that soon
