The Palmetto State scallops tomatoes with parmesan cheese

Hey y'all! I know that it has been a while since I last wrote, but I have been testing out a lot of new recipes and discovering new places to go eat and I can't wait to share them with y'all! This one I am about to share with you is one that I got from my favorite Food network Chef Ina Garden! Ever tried her Scalloped Tomatoes?! If not this is one you will make over and over and one you will be craving each and every week!

Toasted bread in olive oil and sprinkled with parmesan cheese, this is one side dish that you will not want to pass up, and wont last long so you really won't have to worry about left overs! 

This recipe has a serving size for six people and takes a total of 35 minutes to make. Whose ready for this amazing recipe?! Well keep reading and I'll share with y'all!

What you will need:
2 cups of french bread sliced and cubed
16 plum tomatoes diced
1 tablespoon of diced garlic
2 tablespoons of sugar
2 teaspoon of kosher salt
1 teaspoon of black pepper
                                                  1/2 cup of julienned basil leaves 
                                                  1 cup of grated parmesan
Steps:

  1. Preheat the oven to 350 degrees F
  2. Heat 3 tablespoons of olive oil in a large saute pan over medium heat. Add the diced bread cubes and stir to coat with the oil. Cook over medium heat for 5 minutes, turning often (you just want to brown the cubes of bread on all sides).
  3. Next, combine the tomatoes, garlic, sugar, salt and pepper into a large bowl. When the bread cubes are finished, add the tomato mixture and continue to cook, stirring often for 5 minutes. Off the heat mix in the basil.
  4. Pour the tomato mixture into a shallow baking dish. Sprinkle with Parmesan cheese and drizzle with 2 tablespoons of olive oil
  5. Bake for 35 to 40 minutes or until it is bubbly and golden brown on top.

I find this recipe to be a good side dish with chicken or just a quick snack all on its own. You think you would eat just one bowl? Lemme answer that question for you and tell you that you will be having bowl after bowl and within that day the dish will be gone!
