Wings and things: Eats from my own kitchen

As y'all know, I love me some great southern food, so naturally I would have to bring that southern cuisine into my own kitchen. Every southern loves their fried chicken or wings, so this post today is about one of my favorite family recipes for, you guessed it, WINGS! So let's indulge shall we!

First let's gather our ingredients.
     1-2 packages of Chicken Wings or        Drumsticks (4- 5 wings/ drumsticks per person)
    6 Cloves of Garlic, peeled
    2 Tablespoons of Olive Oil
    1/2 Cups of Mayo
    1 Tablespoon of Corn Syrup
    2 Tablespoons of Parmesan cheese
    1 Teaspoon of Lemon Juice
    1 Tablespoon of Apple Cider Vinegar
    1/4 Teaspoon of Thyme
    1/4 Teaspoon of Marjoram
                                                                      1/4 Teaspoon of Oregano
                                                                      1/4 Teaspoon of Basil
                                                                      1/2 Teaspoon of Red Pepper Flakes
                                                                      1/2 Teaspoon of Salt
                                                                      1/4 Teaspoon of Black Pepper

Now that you have your ingredients together, turn your oven onto 350 degrees Fahrenheit. Next in a small dish place garlic cloves and Olive Oil. Cover tightly with aluminum foil and place in the oven for 20-25 minutes or until garlic is tender. 

While the garlic is cooking, prep your chicken wings, drumsticks, or whatever you choose to use (personally I use the drumsticks, they tend to have more meat on them). Rinse off each piece of meat, pat dry and lay on a baking sheet lined with aluminum foil. Then place the baking sheet into the 350 degree oven and cook until cooked all the way through (probably around an hour, depends on your preference for meat doneness)

Now the sauce! The best part of the whole meal; it is creamy with some heat but sticks true to my Italian roots (lovin' that Parmesan cheese)! Mix together the remaining ingredients until smooth and put off to the side. When the garlic is done, let it cool before adding to the sauce mixture. When everything is combined, place in the fridge to chill.

Now let's assemble cause it's time to eat y'all! Once the wings have come out of the oven, remove the sauce from the fridge and either place in a dish so everyone can put their own sauce on top or throw the wings into the sauce and toss together till coated! 


Now clearly I couldn't have a meal like this and not have a perfect pairing to go with it. Natural choice of us Southerners is to grab a beer, and yes that is exactly what I have done. I love the taste of Bud Light Lime, and this choice actually paired perfectly with these wings and the sauce! With its crispness and hint of lime, it balanced out the kick of red pepper flake and Parmesan cheese in the wing sauce to leave your tongue wanting the combination over and over.
