The Palmetto State stirs up some Chicken Fried Rice

Nothing tastes better than freshly made sweet and sour chicken or white rice or even better chicken (or pork) fried rice. Probably one of my favorite Chinese food dishes of all time. Well I took it upon my self one night to attempt to make this dish. Now it didn't turn out bad (maybe y'all have some suggestions), but this recipe is one I will keep handy at all times, especially when I have a craving for some fried rice. 

Well let's gather some ingredients first shall we:

2-3 tbs Soy Sauce (I use low sodium)
3-4 cups of Rice (I used boil and serve rice)
Salt
Pepper
Onion
Garlic cloves (1 large clove)
3 Large Eggs (beaten lightly)
2-3 cups of Frozen veggies
Chicken Breast (2-3 pieces)
Canola Oil
Sesame Oil 

Now those are pretty simple ingredients right? I'm pretty sure you have all of these ingredients in your pantry right now... and if you don't I recommend having these staples available to you at all times. But enough of this talk.. lets get onto the recipe shall we. 

1. Add oils and chicken into either a large pan or wok ( i prefer a wok because everything cooks nicely and you only have one pan to clean up)

2. Cook the chicken on all sides for about 3-5 minutes or until cooked all the way through

3. While your chicken is cooking we need to cook the rice. Now you can make the rice ahead of time or make it same day, which ever is easier for you. I personally made it while the chicken was cooking and it came out just as good!

4. Now that your chicken is done, remove from pan or wok (BUT MAKE SURE YOU LEAVE THE OILS IN THE PAN!!) this is very important because this is where all of your flavor is coming from!

5. Add to your pan or wok the frozen veggies, chopped up garlic clove and died onion and sauté.  Let this cook for a few moments, or until the veggies are starting to get soft.

6. Next move veggies over to one side of the pan or wok and on the other side pour in your eggs. Let cook for a few moments.

7. Once eggs are cooked, add rice and chicken into pan or wok and cook all the way through. 

Finally add soy sauce to the pan or wok and keep stirring until complete!

Now did this sound hard in any way? Ohh you said no... well let me tell you, it was so simple anyone could make it. Wanna see how it turned out in the end?
