The Palmetto State stays indoors for homemade Chicken Noodle Soup
In case y'all haven't heard, currently the Palmetto State is covered in rain up and down the coast. With flooding everywhere, roads closed and no way I can make it to work, I stayed snuggled up indoors and cooked. Now what meal can we pair up with a rainy day? I'm going with the obvious answer, homemade chicken noodle soup and my famous grilled cheese.
Now if y'all have been reading my blog, you can refer to my grilled cheese article for the delicious recipe. Trust me, with my homemade chicken noodle soup, this sammie pairs perfectly with it. My friends here in the Lowcountry should be sad they missed out. But shall we continue on with the soup recipe.
Taking only 4 hours to make in the crock pot, this is one recipe that anyone can make, and I mean ANYONE! All you have to do is throw the ingredients in the crock pot, set it to cook for four hours and boom you have your own homemade chicken noodle soup. Keep reading for the recipe.
As y'all know, we always start off by gathering our ingredients, so this post won't be any different. Let's go grab our ingredients y'all.
Ingredients
6 cups of Chicken Broth
2-3 carrots, chopped
2-3 garlic cloves
1 bag of egg noodles
2-3 chicken breasts, thawed
1 yellow onion, chopped
2-3 stalks of celery, chopped
1 Cup of Water
1 Tablespoon of EVOO
2 Bay Leafs
2 sprigs of Thyme
Alright, now that you have gathered everything you will need, lets start cooking shall we?
First place chicken in the bottom of the crock pot. On top of the chicken, add chopped celery, carrots, onion and garlic. Next add chicken broth, water and EVOO. Add Bay leafs and thyme and cover the crock pot.
Let this cook for four hours. Add egg noodles to the crock pot and let cook for 10 more minutes. When getting ready to serve, remove bay leafs and thyme.
Now it's time to serve! How can you pass up something as good as this; and paired with my grilled cheese, this is a meal you do not want to miss out on.
