"Hello Fresh" food: Sizzling beef stir fry

Now normally, y'all know I love to make everything from scratch and have a good home cooked meal. Well since work has been crazy (hello busy season on Hilton Head Island), making meals is something on the back burner. My sister and her boyfriend suggested I try HelloFresh. They send you everything you need to make the meals that you select. Seeing their food pictures and hearing their reviews I decided why not. Her boyfriend sent me a link to try a free box and so I accepted. If you're not sure how HelloFresh works, well let me give you a quick run down. HelloFresh is a "hassle free" 30 minute meal for two to four people. Everything comes in a box delivered to your door on the day of your choice to prepare three to five meals during the week. I mean come on, if your busy just like me, this has to sound like a sure win. So this week I choose my three meals and this first post is going to share my first selection; Sizzling Beef Stir Fry.

Now in the box they are suppose to send you your recipe cards (unfortunately mine did not come in the box) but you can look them up online on their website as well and it literally tells you step by step how to prepare this 30 minute meal.

As y'all know I typically list out the ingredients you need, I was considering not doing that because it all comes in the box, but if you want to make this and not order the box, I figured you would need the ingredient list; so here it is.

My Box included:
12 oz of Beef Sirloin Tips
1/2 cup of Jasmine Rice
1 ounce of soy sauce (or two take out packets of soy sauce)
1 thumb of ginger
2 garlic cloves
1 red onion (i used only have the onion even though they said use the whole)
1 Red Bell pepper
2 bunches of Bok Choy
2 teaspoons of sugar (i personally did not add this)
Salt 
Pepper
Olive Oil or Vegetable Oil

Alright, ready to cook? Well keep reading

First bring one cup of water to a boil. Once the water is boiling add the 1/2 cup of jasmine rice. Cover, reduce to a simmer, and cook until tender, about 15 to 20 minutes. Once cooked, remove from heat and keep covered

Second you will need to wash and dry all of the produce that came in the box (or that you bought from the store). Peel and slice the red onion thinly. At this step I personally diced the onions because i don't like to bite into big chunks of onion. Then core and remove the white ribs and seed from the red pepper; julienne into thing slices (again I died the red pepper). Now with the garlic this is up to you, you may either grate the garlic or mince the garlic (i personally minced it). Then peel and mince the ginger (make sure it is minced very fine). Finally cut the white ends off the Bok Choy and move to the side. 

Next in a bowl, mix the garlic, ginger, sugar, soy sauce, a teaspoon of oil and beef in a bowl and mix together until the meat is coated. In a frying pan, heat up a drizzle of olive oil; then add the beef and cook until done to your liking. 

Take the beef out of the pan and heat up another drizzle of olive oil. Then add the onions and pepper. If you notice that they are not softening enough, add a splash of water and that should help them cook. After about three minutes, add the Bok Choy and cook until wilted (about 2-3 minutes). After all the veggies are cooked, add the beef back and stir everything together.

On the right you see everything combined in a frying pan waiting to be plated.

Alright, now that everything is cooked, it was time to plate. First on the plate should go the jasmine rice. Once divided evenly among two people, top the rice with the beef stir fry mixture. and bam you have a quick thirty minute meal! 

Now when you try something like this, there is always bound to be mishaps and things not go right. This has been true to me, from not getting my box to having no recipe cards, my first take of HelloFresh has not been a good one, but I do have to say this meal smells so good.
